First of all, look at all the books about fish that are around. Especially check who the publishers are.
Instead of writing your whole book about zebra danios, you need to put together a proposal, which is like a list of the thing that you want to have in your book. The important stuff you want others to know about zebra danios, and why this book will be better and different from any other book about zebra danios on the market.
When you've finished your proposal, send it out to those publishers who already do books about aquarium fish.

Well, here's the first and most important step:
Write the book. It won't do you any good to look for publishers now, because publishers aren't interested in potential, they're interested in books.
Once you've got the book published, find some other books of a similar genre, look in the copyright section, and put together a list of publishers. After that, it's just going through the motions of finding a publisher for your book.
